Strawberry season is so brief here that underripe to utterly perfect to the last mushy dregs can be witnessed in about a week and a half of farmers markets. I buy them and devour them at every stage, but sometimes you need a little extra something to coax the not-quite-ripe batch into fragrant perfection. I'll bet that roasting at 350 for twenty minutes or so with rhubarb and a little honey would even work for supermarket strawberries. Seriously, the smell is transcendent, and fixes every problem that comes with trying to make a strawberry rhubarb sauce on the stovetop. </div>

While this sauce's ultimate purpose in life is to make a shortcake with savory biscuits (never sweet biscuits or cake), the biscuit recipe I tried this time around was disappointing. The secret is in aging the dough in the fridge for at least four days. Bread flour is also required--I like King Arthur. I know it's a tease to tell you about the deep flavor, chewy inside and crisp outer shell on the pizza crust when you won't be able to eat it for four days, but it is So. Worth. It. Once you try it, you'll be putting a batch in the fridge twice a week so you can make this pizza every day.</div>

Combine 2 3/4 C lukewarm water, 1 Tbsp of sugar, and 1 1/2 Tbsp bread machine yeast in a big bowl. Let the yeast bloom for a few minutes and combine 1 1/2 Tbsp kosher salt (for regular salt use a bit less than a Tbsp), 6 1/2 C bread flour, and (optional) 2 tsp vital wheat gluten (it helps develop the crust, and you're going to make so much of this dough that it's worth it to buy a bag) in another bowl. </div>

Stir 1/4 C olive oil into the water and yeast, and then dump the dry ingredients into the big bowl. Stir until all of the flour is moistened. It's ok if it's a wet dough, you'll add more flour when you need to handle it. If it's dry, add more water. Cover the bowl with a towel and let sit in a warmish place to rise for two hours. </div>

After two hours, cover the bowl with plastic wrap, or the cover that came with the bowl if you want to be fancy about it. Put it in the fridge for four days and forget about it. Seriously, just get pizza out of your mind. It's going to be really hard, but you can power through. </div>

After at least four days, grab a handful of dough from the bowl and roll it in enough flour so that it doesn't stick to your hands. A handful will eventually become a good 12-inch pizza crust, so only take out as much dough as you'll need that night (it's just going to keep getting better as it ages, so you'll thank yourself in two days if you have some left). Stretch it out by hand as far as it will go--it won't go too far, the structure of the dough needs to warm up before you can really stretch it--and leave it to rest on a plate or board. Turn on your oven as high as it goes and put in a baking sheet or pizza stone to preheat with it. </div>

Let the dough sit and warm up for 20-30 minutes. Once it's close to room temperature, stretch it out as far as it will go and put it on a square of parchment paper. Add your toppings (the crust will be thin, so go easy). Use a pizza peel or another baking sheet to slide the pizza onto the stone or sheet in the oven. Bake until the edges of the crust are browned. Try to resist burning your hands and tongue on the pizza. </div>

I love chewy, crispy, yeasted pizza crust (<a href="http://cantabridgette.blogspot.com/2012/02/otto-pizza.html" target="_blank">obviously</a>). But it is really hard to accomplish at home (especially on short notice). While I work on perfecting my chewy pizza dough recipe, our go-to for homemade pizza is a <a href="http://www.kingarthurflour.com/blog/2012/07/27/0727-st-louis-style-pizza-thinking-outside-the-takeout-box/" target="_blank">St. Louis-style cracker crust</a>. </div>

It takes about a minute to measure out the dough ingredients and stir together, and then I divide the dough and let it rest while I grate cheese and chiffonade basil. If you don't have a batch of <a href="http://www.cookingforseven.com/2008/12/homemade-pizza-sauce/" target="_blank">pizza sauce</a> handy, it's probably easier to start that first (as a New England girl raised on delicious <a href="https://www.facebook.com/pages/Athens-Pizza-and-Family-Restaurant/104945966215212" target="_blank">Greek pizza</a>, I prefer a sweet, thick, and heavily-herbed pizza sauce, but your mileage may vary). I don't do the authentic Missourian smoky Provel toppings with my St. Louis crust--it can support pretty much any toppings in the right amounts.</div>

While most of the recipes I've seen for this kind of crust yield two pizzas from two cups of flour, I like to get three or four (it makes it easier to roll the dough as thin as you can). And if you roll the dough out on the parchment paper you're going to bake it on, you don't have to worry about transferring paper-thin dough to a new surface. </div>

Sidenote: When shopping for mozzarella for caprese, I've always passed by Trader Joe's standard mozzarella with my nose up (assuming the flavor would be better for pizza and other melted applications). I discovered with this pizza that it is actually moist and sweet, perfect for eating cold, but not flavorful enough when melted to be great on pizza. Next time I'll try one of the harder cheeses with my cracker crust. </div>

Over the past few years I've come to really appreciate the bold, clean flavors of winter citrus--who doesn't? Beautiful pink grapefruits, comically oversized pummelos, delicate Cara Cara oranges... they are what I crave in January. The problem is that I hate the taste of bitter citrus pith (even though my mom always said that was the nutritious part) and I really can't handle the texture of a citrus segment with the membrane still on. You basically just peel your citrus with a sharp knife like you'd peel an apple. The challenge is to get all of the pith off without taking too much flesh (the flesh left on the peels you can scrape off with your teeth). Then you hold the fruit over a bowl and cut along both sides of each membrane line, popping out perfect little wedges of flavor. Squeeze the messy leftover membranes over the bowl (a hand juicer comes in handy) and discard.</div>

My first yeast bread escapades were back in Portland in Aught Six, when <a href="http://www.nytimes.com/2006/11/08/dining/081mrex.html?_r=0" target="_blank">Jim Lahey and Mark Bittman</a> brought no-knead bread into vogue. My roommate had a heart-shaped Le Creuset pot with lid that was perfect for Co.-style loaves. Over the last couple of years I've had pizza stones but no dutch oven, so I've come to like the <a href="http://www.artisanbreadinfive.com/2010/02/09/back-to-basics-tips-and-techniques-to-create-a-great-loaf-in-5-minutes-a-day" target="_blank">Artisan Bread in Five Minutes a Day</a> method. </div>

Where the Lahey method involves dumping the dough into a preheated dutch oven, the ABFMD method uses a bread stone. The catch is that to create the steam environment required for a good crust (which the preheated pot does beautifully), you're supposed to dump a cup of hot water into a metal pan on the floor of the oven. I've never been able to add the water without a) most of it spattering into the heating element or b) droplets hitting my pizza stone and [ahem] violently turning it into multiple jagged stones. </div>

My two-part solution is to completely line the rack my stone rests on with tinfoil, and to just place a metal pan full of water on the bottom of the oven when I start preheating--the crust is nice and thick and the steam lasts longer. Next time I'm going to try brushing the formed dough with water just before putting it in the oven. </div>

I knew my Christmas decorations wouldn't have been complete without a Christmas countdown or Advent calendar of some kind. </div>

While I am definitely the crafting half of my household, I wanted A to have a stake in our first holiday decorations together as well. Luckily, he has a serious penchant for covering the chalkboard surfaces in our kitchen with sweet and silly drawings. We (I) decided that he would come up with a picture idea for each day in December leading up to the big day and draw them in little cards for me to open. A drew his ideas in the cards and we stuck them on the edge of the kitchen-living room wall. </div>

I cut the ribbon to the right length to wrap around the door of a cabinet in our living room, "finished" the ends with packing tape so they wouldn't unravel, and taped it tightly in place (if nobody can see them, who cares how nice the structural parts are?). Spacing the clothespins along the edge completed our card holder. </div>

While searching Pinterest for holiday decorating ideas I came across an adorable <a href="http://pinterest.com/pin/66709638201856311/">candle craft</a> that I had to make. I don't burn candles often but I knew these would look great with my holiday greenery. </div>

The assembly was really simple once I realized that I needed an adhesive to hold the cinnamon sticks to the candle while I was putting them together. If I were a craftier person and owned a glue gun, I would have run a thread of hot glue around the candle near the bottom. I am not that person (yet?), so I used double-sided tape around the bottom of the candle. If I do burn the candles, I'll make sure to stop above the tape line. </div>

When the sticks were in place, I first tied them up with a thicker jute twine, but decided I liked the jute string look better. </div>

On the first weekend of November, the temperature dipped and I started to think about the holidays. I laid the snowflakes under the string and dotted glue where the string would lay. For at least a few of the glue spots on each flake I used a tiny scrap of paper to sandwich the string for extra security.</div>

The hardest part of the whole project is to measure and space out the hooks and the lengths of the string. A measuring tape is your friend here. Since my ceiling is so high I alternated strings of three and two.<br />

This project only took a few hours (approximately five episodes of The West Wing). It was easy enough that when I finished, I thought, "Why not cut 60 more snowflakes for each windowpane on the long side of our apartment (and 48 more for some friends)?"At the end of the latter process, I was ready to be done with snowflakes for a while. Luckily, all of my snowflakes have lasted the two weeks since they went up, and I'm confident that at least the garlands will last the season to be packed away for next year!</div>

After a day spent working from home (thanks for staying on, power) and listening to the wind, I got a little stir crazy and decided that I needed to make cookies, immediately. There was <a href="http://atendercrumb.com/2008/09/my-favorite-chocolate-chip-cookie/">a chocolate chip cookie recipe I've been dying to try</a> (her qualifications for the ultimate cookie intersect perfectly with mine), so I assessed my existing supplies. </div>

I haven't purchased chocolate chips for a really long time, but we had just bought three huge bags of Halloween candy (and had a random disc of <a href="http://www.tazachocolate.com/store/Products/SaltPepperDisc">Taza salt & pepper</a> hanging around). I had no cake/pastry flour, but I did have APF and cornstarch. The recipe called for a pound of butter, so I figured halving the recipe would be a more reasonable batch size for random evening cookies. I did some quick conversions (if you're ever going to bake anything, you need a kitchen scale. Trust.) and made some necessary adjustments (I've never met a chocolate chip cookie recipe that couldn't benefit from extra salt, double vanilla, and some espresso powder). Twenty-five minutes later, I had a new favorite cookie recipe (that actually closely approximates the Momofuku Milk Bar Compost Cookie--next time I'll be adding pretzels). </div>

1. It's ok if the butter is in the fridge (or probably even the freezer). Take it out and cut it into tiny cubes and place in a big bowl. </div>

2. Measure out the dry ingredients with your handy kitchen scale in a smaller bowl; set aside. </div>

3. The butter should be softish by now; if not, wait a few more minutes. Add the sugars and whack the mixture around with a wooden spoon for a while til it's evenly combined. </div>

4. Add the eggs and stir a lot with the spoon. The eggs make it much easier to stir, so try to get some air involved at this point. Feel superior to all of those cool people with their stand mixers. Also add in the vanilla and stir for a while more. </div>

5. Add the flour and stir til thoroughly combined. </div>

6. Stir in the espresso, chocolate, Snickers, and pretzels. </div>

7. Set the oven to 350 and put the bowl of dough in the fridge. Eat kind of a lot of it. The mild stomachache is totally worth it. </div>

8. After about 10 minutes, pull out the dough and fill a greased half sheet pan (I'm out of parchment paper too!) with about half of the dough. You can go large or small here, the thickness of the cookies will wind up about the same either way. </div>

9. Bake for around 9 minutes (for small cookies) or 15 minutes (or large cookies). Keep an eye on them and pull out when the cookies around the edges get browned at the edges (they'll still be puffy and pale in the middle). They will inevitably have expanded to run into each other, which is ok. They'll just be square. Still super delicious.</div>

10. Cool on the pan. Cook the rest of the cookies in the same manner. Eat them. You're really going to want to eat all of them, but it's better to have some left for tomorrow. You're going to want some tomorrow. </div>

I made hers last year and loved it but wanted to pump up the flavor of the spices, among a few other tweaks. Rotini is just so perfect for catching every drop of this amazing sauce, so I have to recommend it over penne. </div>

2 slices crusty artisan bread<br />
1 Tbsp dried sage<br />
2 Tbsp butter<br />

2 C pumpkin puree (a little more than a can; you can probably just do one 15 oz can and be fine)<br />

4 oz fontina, shredded (keeps the sauce from breaking)<br />
4 oz extra sharp cheddar, shredded (this is the flavor; you could try a flavorful gruyere instead)<br />

Cook the rotini a couple of minutes shy of the box time (quite al dente). Drain and set aside in the strainer. </div>

Process the bread into crumbs. If you don't have a food processor, dice the bread into the smallest cubes that you can manage. If you do use a processor, grate the cheese in it after the bread. No processor--grating 10 oz of cheese by hand won't take too long.</div>

Melt the 2 Tbsp of butter in a large skillet and toast the crumbs/cubes and sage in the butter until golden. Set aside. </div>

In the skillet, melt the 4 Tbsp of butter over medium heat until golden brown. Add the flour and whisk like mad. Don't be afraid to let it brown--when it comes to a roux, color is flavor. My roux was quite brown, just short of almost burnt, and it tasted great and nutty in the final product. Stir in the stock and whisk until smooth, cooking down a bit, and then whisk in the milk. </div>

Whisk in the seasonings and let the sauce cook down until thick (coating the back of a wooden spoon). Stir in the pumpkin and honey and cook it down about two minutes more.<br />

Turn off the heat and add 2 cups (8 oz) of the combined shredded cheese. Stir until the cheese is melted fully into the sauce.<br />

Place rotini into a 10x13 baking dish or pan. Pour the sauce over it and stir to combine. Sprinkle first the remaining shredded cheese and then the breadcrumbs over the top. Place under the broiler until the cheese on top is melted (set alarms for yourself at maximum 2 minute intervals--the broiler acts fast!).<br />

The farmers' market this weekend was bursting with perfectly crisp apples in over a dozen varieties. I decided to grab two new-to-me kinds (Jonagold and Mutsu) and an old favorite that I haven't had in a couple of years (Pink Lady).</div>

I had almost 10 pounds of perfectly crisp apples, so I decided to do a head-to-head tasting and then a little baking (stay tuned for my favorite pie recipe). I made sure to choose apples that were recommended for both eating and baking.</div>

All three of the varieties were deliciously crisp, but the Mutsu might have taken the crispness crown. It had a good balance between tart and sweet. </div>

Behind crispness, tartness is my second most important apple factor. In the offseason, if the Honeycrisps are gone I will only buy Granny Smith (no mealy apples allowed!). </div>

The Jonagold was the sweetest apple in the mix, with definite honey notes. If you like a sweeter apple, Jonagold is almost as sweet as Red Delicious, but still edible (Red Delicious are probably my least favorite apple). </div>

The Pink Lady is perfectly tart with a dense crunch. I liked the Mutsu a lot, but Pink Lady and Honeycrisp are still my favorite eating apples. The Pink Lady was a great afternoon snack with fresh buffalo mozzarella (thanks to a Costco run in the morning). Fall caprese!</div>

We were so lucky to be able to attend the wedding of our dear friends at <a href="http://flyingcaballos.com/" target="_blank">Flying Caballos Ranch</a> this summer. The ranch has a large farmhouse, a two-bedroom guesthouse and guest studio, as well as a really special one-bedroom tower. The groom's party stayed in the guesthouse and studio, the bride's party in the farmhouse, and the tower was a beautiful honeymoon suite. The rest of the guests stayed at various inns in San Luis Obispo just a few minutes' drive from the ranch. The wedding ceremony was in a beautiful field next to the houses and the reception was in the farmhouse yard. It was really special to be able to spend five days with everyone in such a picturesque location. If you're thinking about getting married in central California, you should definitely consider Flying Caballos. </div>

Earlier this summer we spent an amazing five days in San Luis Obispo for our friends' wedding. Paso Robles is an up and coming wine destination and a great option if you want to plan a more affordable wine tour than Napa or Sonoma. Our flight home from Iceland was at 5 pm, so we decided to spend the day at the <a href="http://www.bluelagoon.com/" target="_blank">Blue Lagoon</a>. We arranged for an <a href="http://www.grayline.is/tour/All_our_Day_Tours/AH18_The_Blue_Lagoon_to_Keflavik_Airport_/Iceland.is" target="_blank">affordable transfer</a> from our studio in <a href="http://cantabridgette.blogspot.com/2012/08/reykjavik-iceland.html" target="_blank">Reykjavik</a> to the Blue Lagoon. The tour bus held onto our luggage while we were there, and then took us to Keflavik Airport when we were done.<br />

We had heard that the Blue Lagoon was a unique, if expensive, experience, but didn't know quite what to expect. It was relatively expensive ($50 per person plus refreshments), but for an all day do-it-yourself spa experience $50 isn't so bad. The waters defied all expectation...</div>

Upon arrival we walked down a path carved through young volcanic rock and got a glimpse at the unique mix of geothermally heated seawater, freshwater, silica, algae, and assorted minerals that form the signature blue water. </div>

The silica and minerals coat the lava rocks like the lining of a pool. Guests swim and lounge in the healing waters; there are tubs of silica mud around the lagoon (it feels like a gel) to apply to your skin as a masque. I had a great time with the mud but the tiny particles got under A's contact lenses and roughed them up--definitely take your contacts out in the locker room. I wore my (cheap plastic H&M) sunglasses the whole time and didn't notice any abrasion on them.</div>

Sunglasses are a must, and make sure to stay submerged or in shade if you're spending hours there. Since the water isn't chlorinated they require you to take thorough scrubbing showers before entering the lagoon; sunscreen isn't really an option. The opaque water did help block the sun but our faces got a bit pink. </div>

On our last night in <a href="http://cantabridgette.blogspot.com/2012/08/reykjavik-iceland.html" target="_blank">Reykjavik</a> we walked a few blocks from our studio down to the harbor. We were bleary-eyed and exhausted from our <a href="http://cantabridgette.blogspot.com/2012/08/the-little-foss-golden-circle-iceland.html" target="_blank">Golden Circle tour</a> and swimming at the <a href="http://40pools.wordpress.com/2012/06/03/sundholl-reykjavikur/" target="_blank">Sundholl Rekjavikur</a>, but we were determined to see something approaching a sunset at least once in Iceland (the sun was still a ways from dipping below the horizon, but we got some good sunset-y colors). There was a little park with this fantastic sculpture (I think it looks like a whale skeleton and a Viking boat). </div>

There are very few things I like better in photography than framing up a good landscape. Iceland's vast plains and skies lent themselves well to this treatment. The third of the three main <a href="http://www.icelandhorizon.is/Excursions.aspx?id=GoldenCircle" target="_blank">Golden Circle</a> sites that we visited, <a href="http://en.wikipedia.org/wiki/%C3%9Eingvellir#Founding_of_Parliament" target="_blank">Þingvellir</a> is maybe the most significant site in Icelandic history. The first Icelandic Parliament was formed here in 930 AD, and it has been a symbolic site for Icelandic political gatherings ever since. The Haukadalur Valley hosts several geysers, including Geysir and Strokkur. The former was the first of the species named in print in Europe, spawning the geyser name. Geysir erupts much less frequently than Strokkur, but we caught one of its spouts, as you can see above and below. </div>
